Employee Neighbor Gift Recipes and Guide Blog

Neighbor and friend gifts are a great way to bring the holiday spirit. We’ve chatted with some of our employees and asked them what treats they grew up making and passing out to their neighbors. Below are 3 of these family recipes for you to try this Christmas season.

Grandpa’s Cherry Walnut Fudge

Makes 6 4.5x4.3’’ fudge gift blocks. Both the cherries and walnuts can be removed in this recipe.

This fudge is rich, sweet, and filled with delicious inclusions. Wrap it in a gift treat bag with a bow and pass it out to neighbors and friends for the holidays.

Ingredients:

  • · 1 bag of milk chocolate chips
  • · 1 ½ bags of semi-sweet chocolate chips
  • · 1, 10oz jar of maraschino cherries
  • · 1 ½ sticks of butter
  • · 1 ½ cups of chopped walnuts
  • · 1 tbsp of vanilla extract
  • · 1 tsp almond extract
  • · 1 can evaporated milk
  • · 4 cups of sugar

Instructions:

  1. Drain, rinse, and rough chop your cherries.
  2. Squeeze out all the juice in paper towels.
  3. In a large mixing bowl, combine your chocolate chips, butter (melted), walnuts, cherries, vanilla, and almond extract.
  4. Butter a 9x13 baking dish.
  5. Put your sugar and evaporated milk in a large pot on the stove over medium high heat.
  6. Cook, stirring often until the mixture begins to boil. About 20 minutes
  7. Cook for another 10 minutes after boiling or until a candy thermometer reaches “soft ball”. Mix constantly for the last 5 minutes.
  8. Add your sugar and evaporated milk mixture to the mixing bowl.
  9. Mix until all chocolate is melted and pour the mixture into your buttered pan.
  10. Pat down and flatten the fudge mixture. This can be done with a cup, potato masher, or any other flat utensil.
  11. Cover with plastic wrap and let it cool. Once at room temperature, store the fudge in the fridge.

Caramels

These caramels are sweet and can be easily wrapped and given to a friend.

Ingredients:

  • · 2 cups of sugar
  • · ½ pound of butter
  • · 1 ½ cups of corn syrup
  • · 1 can of sweetened condensed milk
  • · A pinch of salt

Instructions:

  1. Mix all ingredients together in a pan over low heat
  2. Stir the mixture until all ingredients dissolve
  3. Continue cooking and once the color begins to change to a caramel color pull a small piece and place in cold water. If it forms into a ball it is ready. If not continue to cook and check every few minutes.
  4. Once ready, remove from the heat
  5. Scoop 1tsp of caramel onto baking dishes covered in parchment paper
  6. Once cooled, cut the parchment paper into squares around the caramels and roll them up in the paper

Poppy Seed Bread

Ingredients:

  • · 1 cup plus 2Tb oil
  • · 1 ½ cups milk
  • · 2 ¼ cups sugar
  • · 3 eggs
  • · 2-3 Tb poppy seeds
  • · 1 ½ tsp vanilla
  • · 1 ½ tsp butter flavoring
  • · 1 ½ tsp almond extract
  • · 1 ½ tsp baking powder
  • · 3 cups flour
  • · ¾ cup powdered sugar
  • · ½ tsp almond extract
  • · ½ tsp vanilla
  • · ½ tsp butter flavoring
  • · ¼ cup orange juice

Instructions:

  1. Mix oil, milk, sugar, eggs, poppy seeds,vanilla, butter flavor, & almond extract.
  2. Mix in flour and baking powder. Beat for 2 minutes.
  3. Pour into greased and floured bread pans, 2 regular loaves, 6-7 mini loaves, or 3 medium loaves.
  4. Bake at 350° for about 1 hour (depending on loaf sizes).

For the glaze:

  1. Mix powdered sugar, ½ tsp each of almond, vanilla, and butter extract, & orange juice. Mix well and spoon over hot loaves in the pans.
  2. Let cool in the pans.

The loaves are rich and delicious. Cut them into slices to share or gift a whole loaf.
