Warm Bacon Artichoke Dip with Grilled Pita

INGREDIENTS
- Nonstick cooking spray
- 8 slices thick-cut bacon, chopped
- 1 can (14 ounces) artichoke hearts in water, drained
- 4 (½-inch-thick) slices yellow onion
- 5 (6-inch) loaves thick pita bread
- 2 packages (8 ounces each) cream cheese, softened
- 1 tablespoon chopped fresh parsley
DIRECTIONS
- Preheat oven to 375°; spray 8-inch square baking dish with cooking spray. In large skillet, cook bacon over medium-high heat 5 minutes or until crisp, stirring occasionally; with slotted spoon, transfer to paper towel-lined plate.
- Heat grill pan over medium-high heat. Spray artichokes and onion with cooking spray; place on hot grill pan and cook 5 minutes or until grill marks appear, turning once. Transfer vegetables to cutting board; cool slightly and chop.
- Spray bread with cooking spray; place on hot grill pan and cook 1 minute or until lightly toasted and grill marks appear, turning once. Cut each loaf into 6 wedges.
- In medium bowl, stir cheese, parsley, bacon, artichokes and onion; spread in prepared dish and bake 20 minutes or until heated through. Makes about 4 cups.
- Serve dip with pita wedges.
