Water:
To be adequately prepared for any emergency or disaster, health agencies recommend you store 1 gallon of water per person per day. For a 72-hour emergency kit, you need 3 gallons of water per person. For each gallon of water, plan on drinking 2 quarts and using 2 quarts for personal hygiene each day. It might be difficult to store a year’s supply of water, but it is such a necessity, it would be a good idea to try and store 14 gallons of water per person, to last about 2 weeks.
When storing water in clear plastic containers, it is important to store them in areas with low light and heat and keep the containers off the floor. Pallets, bricks or shelving should be used to store your water supply. Commercially packaged water comes with a best-by date and should be rotated or replaced about every 4 years. If you must use older stored water, the taste can be improved by pouring the water back and forth between two containers.
Food:
Adults typically need 2200 to 2800 calories per day in an emergency situation; children typically need less--about 1400 calories per day. When planning your emergency food storage, consider how much each person in your family typically eats in a day and match the caloric value of long-term food storage products. Most people start their emergency food storage by preparing a 72-hour kit for each family member. Over time, it is good to increase your amount of long-term food and supplies. Long-term food storage buckets and bulk food storage should typically include enough supplies for three months. Purchasing pre-packaged emergency food kits are helpful, because they take up less space and take out a lot of the guesswork.
